Uses for Sulfur
Carbon + Sulfur > Carbon Disulfide, a tremendously toxic compound that is also a great precursor for plastics such as cellophane and rayon. If cloth can be produced for unity, then there's a potential sink for excess Sulfur.
Then there's soaps and surfactants. Both of those are used in water reprocessing and mineral extraction.
Calcium sulfate (maybe made with limestone?) is an important fertilizer.
And of course, if we want to make renewable energy with sun and wind, we might want to make giant lead-acid batteries.
Most especially, there's the option of Sulfur Concrete. It's made by mixing sulfur with aggregate and then just heating it up. It was literally invented as a way to dispose of excess sulfur.

PTTGOh, forgot a big one: explosives. While only so-so in importance for mining (It turns out that excavators can pull down rock pretty easy), it would be perfectly appropriate for us to make shells for our Ship.
